After many weeks of hot and humid Oklahoma weather, we are finally seeing a break in the heat! The night temperatures have started to drop, giving us cool, misty mornings that ice the spiderwebs with a lacy dew finish.

As soon as the cool weather begins to set in, my husband and I immediately begin to talk about fall: fires lit in our wood stove, shorter days spent inside, a time of rest and reflection after the busy summer ends.

One of the things that I look forward to most are the fall flavors, particularly apples. A neighbor recently brought me a huge grocery sack full of them, and inspired this dish!

All the ingredients can be assembled quickly and prepared in one skillet. With the apples and sweet potatoes alongside the pork chops, there is little need for anything else, although I had some brussels sprouts on hand and put them in the oven to roast while the pork chops cooked on the stove.

The flavors of this skillet are very simple, and seasoning here is at a minimum. Feel free to experiment. Finish with a drizzle of maple syrup, honey, or a dollop of natural, homemade apricot jam.

Ingredients

  • 4boneless pastured pork loin chops
  • 1large sweet potatopeeled and cut into 1/2-inch slices
  • 1smallapplepeeled, cored and sliced
  • 1 to 2sprigs of fresh rosemary
  • dash of smoked paprika powder
  • sea salt to taste
  • pepperto taste
  • fat for frying, your choice

Instructions

  1. Remove the rosemary from the stem, chop and combine with salt, pepper, and paprika.

  2. Season the pork chops on both sides.

  3. In a large frying pan or skillet, melt the fat over medium low heat.

  4. Add the pork chops and brown on both sides.

  5. Remove and set aside.

  6. Add additional fat to the pan if necessary and then add the sweet potatoes.

  7. Cook, turning once, until cooked through.

  8. You may need to cover with a lid to create some steam, and watch carefully as they may burn.

  9. Add the apples and toss to combine.

  10. Cook 1 to 2 minutes until apples are lightly browned and partially cooked through. Don't overcook.

  11. Return the pork chops to the pan and toss with the apples and the sweet potatoes.

  12. Adjust seasoning if necessary.

  13. Serve immediately.
