Creamy Mustard Sauce for Salmon
This easy and quick recipe gives you a super tasty creamy mustard sauce. You can serve this sauce with salmon, other fish or even pork and chicken. It is a very quick recipe and is not difficult to master.
You can make this in a saucepan or frying pan. I normally use my cast iron skillet.

Mustard cream sauce for Salmon
This sauce is a creamy sauce made with Dijon mustard, Wholegrain mustard, White Wine, garlic, parmesan and cream. It is ready in 5-6 minutes and adds a bit of creamy sharpness to the meal which is so different from a lemon butter sauce, for example (also good though!).
Just remember to lower the heat when you add the cream and keep an eye on it afterwards before serving so it does not overheat and curdle.
Sautéeing the salmon
Here I pan-seared the salmon gently in some olive oil which gave it a lovely crispy outside layer, and it was flaky on the inside. It was ready in 6 minutes, 3 minutes per side.
For half of the fillets, I removed the skin before frying to keep my wife happy, and on the others I left the skin on. I find the skin is much easier to remove when the fish has been cooked, if you do not wish to eat it.

But you may want to serve this sauce with some pork chops or chicken instead. Then it will take a bit longer to cook the meat.
I served this up with some steamed cauliflower and baked zucchini and peppers, the latter of which took 15 minutes to cook so I had plenty of time to prepare the fish.

You could also decide to bake or grill the salmon if you prefer, like in my salmon recipe for weight loss, but that would take a bit longer to cook, although it would be healthier than frying.
What to serve on the side?
As mentioned, I served this with some steamed and roasted vegetables. But you can serve this simple meal with a variety of side dishes.

This recipe will give you a delicious creamy mustard sauce for use with salmon, other fish or even pork or chicken. The sauce can be made in the time it takes you to cook your salmon in the pan.
Ingredients
- 240g Salmon fillets
- Salt and Freshly Ground Black Pepper
- 1 Knob of butter
- 1 clove garlic, finely chopped
- 100ml White Wine
- 1 tbsp Olive oil
- 50ml Single Cream
- 1 tsp Dijon Mustard
- 1 tsp Wholegrain Mustard
- Salt and pepper
- 1 tbsp Grated Parmesan
Instructions
- Remove the skin from the salmon with a sharp knife if it is still on the fish. Season the salmon with salt and pepper.
- Heat the olive oil in a pan and fry your salmon pieces for 3 minutes on each side, frying the presentable side first.
- This should give you some salmon with a nice crispy outside.
- In the meantime, make the sauce. Saute the garlic in the butter in a pan for about 1 minute. Then add the wine and the two mustard types and simmer until the wine has reduced, for about 2-3 minutes.
- Then lower the heat to a minimum and add the cream and the parmesan and mix well together.
Notes
Spoon sauce over salmon to serve and eat with some baked vegetables.
