Swap Out The Veggies

You can swap out the veggies for what’s on hand. If like most people you end up with a crisper half full of bits and pieces especially after a trip to a farmers market.

Sometimes it’s just so hard to bypass all those fabulous fresh veggies under your nose that we end up wondering what to make with them.

  • asparagus
  • capsicum ( bell peppers)
  • baby spinach leaves
  • peas
  • squash
  • mushrooms
  • crumbled feta
  • olives
  • broccoli
  • you get the picture, add away 😊

Cut Veggies The Same Thickness

When preparing the vegetables try to cut all of the vegetables roughly the same thickness, this ensures that the vegetables all take roughly the same time to cook.

Using a mandolin is a great way to quickly cut vegetables such as sweet potato, zucchini, carrot, and onion so they’re all the same thickness.

FAQs

Why is my zucchini slice soggy? ›

Zucchini is a watery vegetable and for our slice, if you do not remove the excess water it can make the slice soggy and may not bake properly in the oven.

How do you keep zucchini crisp when cooking? ›

Unless you have time to salt and drain the zucchini, wait to salt it until after they're cooked so the salt doesn't draw out the moisture in the oven—this can lead to sogginess. You can add other seasonings, such as dried herbs and spices, before cooking.

How to sauté zucchini without making it soggy? ›

Give the zucchini slices a light pan fry, stopping as soon as the outsides begin to turn golden. You'll be left with a nice, lightly crisp exterior, without the interior becoming soggy. Be patient as you sauté.

Is it better to freeze zucchini raw or cooked? ›

While freezing zucchini is a great way to extend its life, it's not as simple as just popping a few squash into your freezer. Raw zucchini gets weepy and watery after thawing. To effectively save it, you should chop and blanch it first. This helps set the texture and color and makes it last longer.

Can you just slice zucchini and freeze it? ›

Save your summer zucchini for the winter by chopping it up and freezing it.

Do you really need to blanch zucchini before freezing? ›

Yes, you can freeze zucchini without blanching it first. However, if you blanch it first, it will help deactivate the enzymes that can make it more mushy and discolored. The thawed zucchini may be less than ideal.

How to fix a soggy zucchini slice in the oven? ›

Zucchini contains a lot of water. When you cook it, this water starts to come out, and without anywhere to go, it ends up steaming the zucchini from the bottom up, leaving you with a mushy, unappealing texture. This is where the baking rack comes to the rescue.

How do you dry sliced zucchini? ›

If dehydrating zucchini chips raw, then slice them thinly. Season as previously described, or dry them without seasoning. Place in a single layer directly on mesh dehydrator sheets. Dehydrate at 135°F (57°C) for 8–10 hours.

How do you keep zucchini from getting soggy when frozen? ›

Blanch Before Freezing

Yes, you could chop up your zucchini and freeze it just as it is, but I think it's worth your effort to blanch it first. Blanching — giving the zucchini a quick dunk in boiling water — deactivates the enzymes that would otherwise cause the zucchini to become mushy and discolored.

What happens if you overcook zucchini? ›

Unlike harder vegetables (like this cinnamon Roasted Butternut Squash), zucchini has a high water content. That means that if you overbake it, the water will seep out and your zucchini will be soggy. Cutting the zucchini into larger pieces is a nice safety net. Larger pieces are harder to overcook.
